There are lots of books about SharePoint on the market. If we customise our SharePoint user interface will these books still be useful to my users?

My users need to being able to create new documents from multiple templates in a document library e.g. pick from two or more word documents (not just between different new file tyes like a word doc or a spreadsheet). Is this possible or is my structure wrong?
 
Example: A document library for Roading Permits might need a *new* application form and a *new* correspondence letter.
